It's said that we should have breakfast like king!right?How many of you do?hehe!Here is a super delicious pancake recipe which includes banana and chocolates in it.Anything better than this to kick start your day!These are the fluffiest and soft pancakes i'v ever made.The combination of banana and chocolate along with pancakes are just too good!You have to try it.


Here Kashif and Riz (hubby) both love pancakes.Addition of banana and chocolate makes it more yummier for Kashif,that makes me so happy hehe!For him i stuffed some pancakes with extra chocolate!I make such breakfast only during weekends,so they can enjoy it without any hurry burry!



Usually i don't like clicking when the hungry fellows are waiting for food..I have to finish it of in a hurry when they are here!!This one i didn't intended to click too,but when i plated hubby asked u don't want to take pictures?So i rushed and clicked few photos as they allow me some time and wala here is it!!If you are a pancake lover do try this one for sure!

Ingredients
  • 1 & 1/2 cup all purpose Flour
  • 2 tbsp cocoa powder
  • 1 & 1/2 tsp baking powder
  • 2 eggs
  • 1 & 1/4 cup milk
  • 1 tsp vanilla essence
  • 4 tbsp Veg oil
  • 2 bananas
  • Some chocolate chips(optl)
Method
  1. Mash one banana in a bowl and finely chop the other banana and keep it aside.
  2. Mix together dry ingredients and keep it aside.
  3. In a large bowl with the help of a hand whisk nicely beat the eggs and sugar until its fluffy.
  4. Add vanilla essence,oil and mashed banana,mix gently
  5. Gently fold in the dry ingredients and milk mix with light hands.Don't over mix it.
  6. Add chopped banana and mix lightly.(If you want add chocolate chips now or else stuff it n pancakes.
  7. Heat a nonstick pan lightly butter the pan and pour a ladle full of batter over it,When its cooked on one side flip it over and cook the other side (if you are stuffing it with chocolate take some chocolate chips and place it at the center of the pancake evenly then cover it with some more batter,flip it when its done on one side)
Note:If you don't want to add cocoa skip it.

Curries and Khormas are an integral part of Indian cuisine!We need gravies and curries for almost all dishes .We are always in search for a new and simple recipes for curries that goes with rotis and parathas!ryt?Here is one such simple yet flavorful gravy that goes well with any kind of rotis(breads) or rice!


Malabar area is well known for their foods and flavors.We have many breads and rotis made by grinding different kinds of rice!These gravy goes very well with all those delicious rotis. This is a simple and delicious thick tomato base red gravy which is a frequent recipe in my home.I love this with any kind of rotis. In our place khorma means this kind of red thick gravy!So here goes a delightful recipe for you....



In this tomatoes are pureed and then adding to the gravy,This gives a unique taste to the dish.You can do it with mutton or chicken!Both will taste delicious.Over to the recipe

Ingredients
  • 1/2 kg beef
  • 2 medium onions
  • 3 tomato pureed
  • 1 green chilly
  • 1 tbsp ginger paste
  • 1/2 tbsp garlic paste
  • 1 tbsp chilly powder
  • 1/2 tbsp coriander powder
  • 1 tsp garam masala
  • Salt 
  • 1/4 tsp fennugreek seeds
  • small stick of cinnamo
  • 2 pods of cardamom
  • 2 cloves
  • Salt to taste
  • Few curry leaves and coriander leaves
  • 2 or 3 tbsp oil
Instructions
  1. Heat oil in a pressure cooker.Splutter whole spices.
  2. Add sliced onion,green chilly ,gingergarlic saute it with salt for few minutes.
  3. Add pureed tomato ,chilly powder,garam masala,coriander powder and fennugreek seeds.Mix well
  4. Add cleaned beef and some water.Close the cooker and let is sit for 20 minutes after the whistle.
  5. When the pressure release completely open the lid and if its too runny simmer it for few minutes or until you get the desired thickness.
  6. Add some more fresh curry leaves,coriander leaves and sprinkle some garam masala mix and cover it for 10 to 15 minutes.
  7. Serve it hot with your fav roti.
Note:If your tomato is not so red add a table spoon of tomato paste.This will give nice color to the gravy.



This is such a flavorful and distinctive gravy that made in a jiffy .It's is a go to dish here whenever i'm in a lazy mood!Hope this will help you too!

Yaay!Atlast Haleem is on the blog!I love this dish so much!A complete and healthy meal with delightful flavors which contains meat,lentils,wheat and many other spices!The origin of Haleem lies in the popular Arabian dish known as Harees. Haleem has become a popular dish in the city of Hyderabad, in India.It was introduced to the region during the Mughal period by foreign migrants.



Haleem is one such dish which kids and adults love alike in our home.We use to buy Haleem spice mix from here when we are flying to INDIA. I don't want to depend on the mix always and for this reason i thought of trying it from the scratch. What is the thrill in it otherwise ? So here is it!I was hunting for a good recipe for long time!At-last i gave it a try and yaay It's delish!!In many recipes wheat and meats are cooking separately.But i prefer this method where i cooked everything in a single pot,even fried the onions too in the same pressure cooker in which we are cooking the haleem.I made a step by step pictorial here!



Here i used mutton on bone,you can also use boneless meat.No need to cook everything separately,because for sure we need a paste like consistency,we are blending all the wheats and daals after cooking,so i think this method is the best,If you are using boneless meat so no worries about bones too.After cooking take out the meat and then shred it from the bones and then add it to the haleem.



Addition of fried onions gives this dish a lovely and silky texture!In shot this is a one pot simple recipe for Haleem which is lipsmackingly good!So make sure you try this.Hubby said it's delicious!Yay!

Over to recipe
Ingredients
  • 1 cup broken wheat
  • 1/3 cup + 2tbsp split chana daal
  • 4 tbsp masoor dal
  • 4 tbsp urud dal



For Masala
  • 1/2 kg mutton 
  • 3 large onions
  • 2 green chillies
  • 1 tbsp ginger paste
  • 1 tbsp garlic paste
  • 1 stick cinnamon
  • 3 cardamom
  • 4 cloves
  • 1 bay leaf
  • 1 tsp shahi jeera
  • 1 tsp cumin powderfew pepper corns
  • 2 tbsp yogurt(optl)
  • 1 tbsp coriander powder
  • 1 tsp to 1 tbsp chilly powder 
  • 1 tsp pepper powder
  • 1 tsp cumin powder
  • 1 tbsp garam masala
  • Salt to taste
  • Lots of mint and cilantro
  • 3 tbsp Ghee + oil to fry onion and cook the haleem
  • Water 2 to 3 cups
Note :if you don't like whole spices in your haleem make a fine powder of it and add it while adding spices.(I discarded the cinnamon sticks and cardamom pods after cooking)


For Garnishing
  • Ginger julienne
  • lemon wedged 
  • fried onion
  • cilantro and mint 
  • some green chillies 
Instructions
Soak Wheat and lentils for 4 to 5 hours.
1.Heat a 5 liter pressure cooker on medium flame.
2.Pour oil+ghee,splutter whole spices like cinnamon,cloves,cardamom,shahi jeera,cumin seeds and peppercorns
3.Put sliced onion and fry the onion until golden brown(If u feel like oil is not enough to fry the onion add more.
Take out almost 3/4 of the fried onion when its done.



5.Remove the excess fried oil and preserve some for garnishing



6.Add mutton pieces along with that fried onion mix well.Add salt.
7.Add ginger garlic paste and mix
8.Add all the spices like coriander powder,chilly powder,turmeric powder,cumin powder and garam masala. Add yougurt mix well.

  


9.Add 1 cup water and let it boil
10.Add soaked wheat and lentils
11.Pour enough water
12.Check for seasonings and salt add if needed.Close the lid simmer the fire when two whistles are out.Let it cook on low fire for 25 to 30 minutes.(Make sure you added enough water so that it will not stick to the bottom of the cooker)

 

It's done
13.Take out he meat and shred it from the bones
14.If there is any bone discard it and then blend the haleem to a coarse paste

   

15.Transfer it to a big nonstick pan add water if needed,Add shredded meat,ginger julienne juice,mint and coriander leaves and the fried onions,(reserve some for garnishing) and drizzle some onion fried oil on top.Mix well and let it simmer for 10 minutes.Stir in between.

 

Here ready your spicy super tasty haleem with in an hour!Do try it if you are a Haleem lover.



Note :If you want to boil the lentils and wheat separately you can do!



Serve it hot with some lemon wedges and a cup of black tea!Yes you are on business!The delicious steaming Haleem on your table!

Batata Mehshiyeh is a flavorful and delicious dish of Lebanese which means stuffed potatoes!Here the small sized potatoes are stuffed with delicious meat filling and served with a tangy mild spiced tomato sauce.A complete meal with potato,meat and rice!This will be a perfect party pleaser for those who love Middle eastern flavors.



The recipe credit goes to my dear foodie friend Shahzeen!We became friends through a whatsapp food group, who is an extremely talented foodie and also a lovely and sweet person in nature!Some doubts and chit chats turned into a good friendship!Thank you Shahzeen for always being there!She made this recipe for an event in a Fbgroup "Uae food guide"and obviously i wanna participate for it!They actually arrange cook along events on every Monday and the interested people in the group will participate!It's one of the lively and a real foodie group I've ever seen.Even i hosted an event,that was Mughlai Paratha!It's really a special feeling when people follow our recipe and and put their tried picture ans feedback to the event page.Here is their link to this recipe!


This dish are known to have a proper balance of the European cuisine with the eastern spices. The most commonly eaten meats, poultry and lamb, make up some of the country’s most popular dishes.Although it is owned by the Lebanese, it happens to be a popular dish of the Moroccans and Egyptians too. The Syrians claim it to be a part of their cuisine too since ages.







Over to recipe!The dish is served along with a rice mixed with vermicelli.

Ingredients
  • Baby potatoes, peeled and made hollow- 6 no.s (you can reserve the scraped insides to fry and garnish later on)
  • Olive oil/ Butter – to brush
For the Filling:
  • Olive Oil- 3 tbsp
  • Ginger and garlic, crushed – 2 tbsp
  • Cumin seeds- 1 tsp
  • Onion, finely chopped- 1 medium
  • Minced meat- 500 grams
  • Freshly ground pepper- 1 tsp
  • Garam masala/ Allspice- ¼ tsp
  • Salt- to taste
  • Coriander leaves- ¼ cup
For the Sauce:
  • Tomatoes- 2 medium, finely choppped
  • Tomato paste- 2 tbsp
  • Chicken broth- 1 cup (you may use store-bought broth too if you haven’t prepared)
  • Salt- to taste
  • Freshly ground pepper- to taste
  • Water – 1 cup
For Rice
  • Olive oil – 2 ½ tbsp
  • Broken vermicelli pasta – 1/2 cup
  • Medium-grain rice – 1 cup
  • Water – 2 cups
  • Salt – to taste
Method
To Prepare Batata Mehshiyeh:
  1. In a wok, heat olive oil and fry garlic until the raw smell goes away.
  2. Add cumin seeds and onions. Saute until the onions turn tender.
  3. Add in minced meat, salt, pepper and Garam masala/ Allspice. Mix well until incorporated.
  4. Simmer until the meat is well cooked. Add chopped coriander leaves and set aside.
  5. Brush butter/olive oil all over and inside the potatoes. Sprinkle some salt.
  6. You can either do any of the following to prepare the potatoes:
  7. Air fry: 200 degrees for 15 minutes
  8. Bake: 200 degrees for 20 minutes
  9. Deep fry until almost cooked
  10. Set aside.
To Prepare Tomato Sauce:
  1. Frying chopped garlic in olive oil.
  2. Add tomatoes and cook well until they turn mushy.
  3. Add tomato paste, pepper, salt and mix well.
  4. Pour in chicken broth and one cup of water.
  5. Cook until the gravy thickens.
Assembling:
  1. Stuff your potatoes with the prepared meat filling. 
  2. In a baking tray, pour your tomato sauce and arrange the potatoes on it. 
  3. Cover with foil and bake for 15- 20 minutes until the potatoes are well cooked. 

Note:You can also use the potatoes that are small.If the potatoes are big cut it from the center then make hollow and then stuff.(but this will take more time to cook in oven)

To Prepare Rice

1.Wash and drain rice,
2.In a non-stick pot, roast vermicelli in olive oil until they turn golden brown; careful not over-brown or burn them.
3.Add rice and mix well until they are coated with oil.
4.Pour water, add salt and bring to boil.
5.Cook until the rice is tender.


Although it has lots of steps and instructions to follow,but once you start working on it you will realize how simple it is!!It's truly an aromatic and flavorful dish!Do try it I'm sure you will like it!

Baked chicken with some healthy veggies!A comfort meal perfect for the climate!Chicken marinated with Cajun seasoning and some other spices with garlic and tomatoes. Deliciousness!!It's a complete meal with spiced and baked veggies along with chicken.


Kashif really enjoyed it!Actually it was a treat for him on his birthday!Just to make him feel special,i simply asked him what do you want for lunch, and he immediately responded Tandoori chicken!😃I was like,oh nooo!hehe!It was a lazy day for me and i have not much time to marinate it.So i decided to make something simple and quick!Here comes the recipe


Cajun seasoning is a blend of spice mix that includes garlic powder,oregano,thyme,paprika,pepper powder!To know the correct proportion check here ! I love adding it in my sandwich and many other recipes!It gives a nice balanced flavor!


The veggies here were very flavorful with all those seasonings!I used potatoes , corn,mushrooms,garlic, tomatoes and onions!Served it with muthabbal and green salad along with khubs!

Over to the recipe
  • 700 gm chicken
  • 1 n 1/2 tomatoes
  • A small piece pf onion
  • 10 cloves garlic
  • 2 green chilies
  • Some cilantro
  • 1/2 tsp chilly powder
  • 1 tbsp Cajun seasoning
  • Salt to taste
  • 1 tbsp yogurt
  • Salt to taste
  • 1 tsp vinegar
  • Some oil to drizzle while baking
  • Veggies of your choice( i used potato,tomato.mushroom.onion,garlic and corn)
Note:Adjust the heat like how you want!(if you can handle more heat add more,or else less)

Method
  1. Grind together all the ingredients listed under marination!Marinate it to the cleaned and drained chicken at-least for 2 hours!
  2. Take the veggies cut them to medium thick slices and marinate the rest of marination to the veggies.
  3. Preheat the oven to 200 degree 
  4. Arrange the chicken and veggies evenly on the baking tray drizzle some oil on top put some cloves of garlic here and there bake it for 1/2 an hour.
  5. Then take it out brush some more oil sprinkle some Cajun seasoning(optl) turn the side of baking tray and bake it again for 20 minutes to 1/2 an hour or until juices from the chicken runs out completely and got a nice charred marks on the chicken.Serve it by topping some lemon juice and Cajun seasoning!
Note:You can also shallow fry it.

I'm so so so in love with these beauties!hehe!Addicted to macaroons!Really can't stop by one or two even if it's too sweet in nature!The crispy crust and the chewy center with a chocolate filling!!I have no words to explain the flavors blast!



Here i added raspberry to cut down the extra sweetness from the macaroons and frosting!But if you don't want skip it.Raspberries are added in some of them,and rest left with chocolate frosting,because not sure if kids love fruit in it.But trust me it was just awesome.We all love it and have it like crazy!


I love to make meringues because there are no much fats in it!No egg yolks,no butter,no flour , but it's extra sweet in nature! Whenever it's fine !RYT?So the month of love is here!I love February 😊because there are many special days and occasions for me in Feb...!If you are planning to give something sweet and surprise your valentine, then nothing better than this!😊😊(But we never celebrate such days!)



Here i used chocolate butter cream!You can also use chocolate whip cream or cream cheese frosting.For red-velvet always cream cheese frosting are used,so for a change i made it chocolate!All i have to say is you need to try these beauties for sure!It's that good!



For macaroons the key ingredient is almond flour!This will be easily available in supermarkets at the spice section.So let's see how to make this!

Ingredients
  • 3 egg whites
  • 1 cup almond flour
  • 1 tbsp cocoa powder
  • 1 n 1/4 cup powdered sugar
  • 2 tbsp sugar catser sugar
  • 1/2 tsp of salt
  • 1/4 tsp of cream of tartar(optl)
  • 1 tsp vanilla extract or Almond extract
  • 2 or 3 drops of red food color
For Filling
  • 125 gm butter
  • 125 gm icing sugar 
  • 25 gm cocoa powder
  • A tsp of vanilla 
  • Some raspberries cut into thin slices
Method
  1. In a large bowl sift together icing sugar.almond flour and cocoa stir to combine.
  2. Beat the egg whites, salt and cream of tartar in a large bowl with an electric mixer on medium speed until they hold soft peaks. Increase speed to high and slowly add the sugar,red color continue to beat until the whites hold a stiff peak and they are glossy.
  3. Using a spatula fold the sifted almond flour and icing sugar mixture into the egg whites mixture. Do not worry because the egg whites will deflate a little.
  4. Spoon the batter into either a piping bag or in a zip lock bag. Snip off one corner of plastic bag to create a ¼ inch opening.
  5. Pipe little mounds the size of a chocolate kiss on the parchment line baking sheets, about 1 ½ inches apart. Let the cookies stand uncovered for 30 minutes.After resting, the batter should not stick on to your finger on touch
  6. Preheat the oven to 160 degree.
  7. 8) Bake cookies for 15 minutes. Make sure to rotate the baking sheets half way thru the baking time so they cook evenly.
  8. If it's cooked perfectly it will not stick on to parchment paper.This temp and timing was perfect for me!
For Butter Cream
  1. Cream together butter and icing sugar along with cocoa and vanilla until you get nice creamy filling!
  2. Sand-which the frosting and sliced raspberries in each macaroons and enjooy!


Really making macaroons are not at all a big deal or rocket science ! It's so simple to make and the taste i can't express in words...It's fantabulous!



In this picture can you see the texture?The chewy center and the crispy outer cover filled with chocolate butter cream and the juicy raspberries!Oh it was delicious!
